Ingredients

Instructions
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Cook until softened, about 5 minutes.
Stir in garlic, oregano, thyme, and red pepper
flakes. Cook for 1 minute more.
Add vegetable broth, tomatoes, black beans,
corn, spinach, and kale. Bring to a boil, then reduce heat and simmer for 15-20
