Mango chicken is a popular dish that is often served in Chinese restaurants. It is a sweet and savory dish that is made with chicken, mango, and a sweet and sour sauce.
Ingredients:
1 pound boneless, skinless chicken
breasts, cut into bite-sized pieces
1 tablespoon cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
1 onion, chopped
1 bell pepper, chopped
1 cup mango chunks
1/2 cup chicken broth
1/4 cup sweet and sour sauce
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
1/2 teaspoon red pepper flakes (optional)
Instructions:
In a large bowl, combine the chicken,
cornstarch, salt, and pepper. Toss to coat.
Heat the oil in a large skillet over
medium-high heat. Add the chicken and cook until browned on all sides. Remove
from the skillet and set aside.
Add the onion and bell pepper to the
skillet and cook until softened.
Stir in the mango chunks, chicken broth,
sweet and sour sauce, soy sauce, honey, rice vinegar, and red pepper flakes (if
using). Bring to a boil, then reduce heat and simmer for 5 minutes, or until
the sauce has thickened.
Return the chicken to the skillet and
cook for 1-2 minutes, or until heated through.
Serve over rice.
Tips:
For a spicier dish, add more red pepper
flakes.
If you don't have sweet and sour sauce,
you can make your own by combining equal parts sugar, vinegar, and ketchup.
Mango chicken is a great dish to serve
with steamed vegetables or a salad.
