Pot roast is a classic comfort food that is perfect for a cold day. It is also a very easy dish to make. All you need is a good quality cut of beef, some vegetables, and a few simple spices.
Ingredients:
2 pounds beef chuck roast
1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups beef broth
1 cup red wine
Instructions:
Preheat oven to 350 degrees F (175 degrees C).
Heat olive oil in a large Dutch oven over
medium-high heat.
Season beef roast with salt and pepper.
Brown beef roast on all sides.
Remove the beef roast from the Dutch
oven and set aside.
Add onion, carrots, celery, and garlic to Dutch
oven.
Cook until softened, about 5 minutes.
Stir in thyme, rosemary, salt, and pepper.
Return beef roast to Dutch oven.
Pour beef broth and red wine over beef roast
and vegetables.
Bring to a boil, then reduce heat to low.
Cover and cook for 2-3 hours, or until beef
roast is tender.
Remove the beef roast from the Dutch
oven and let rest for 10 minutes.
Slice beef roast and serve with vegetables.
Tips:
For a thicker gravy, whisk 1 tablespoon of
cornstarch into 1/4 cup of cold water and add to the Dutch oven.
You can also add potatoes to the Dutch oven
with the vegetables.
Serve pot roast with mashed potatoes, roasted
vegetables, or a salad.
