This creamy tomato soup is the perfect comfort food on a cold day. It is easy to make and made with simple ingredients.
Ingredients:
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
1 (28-ounce) can crushed tomatoes
1 (14.5 ounce) can of diced tomatoes
1 cup vegetable broth
1/2 cup heavy cream
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Heat the olive oil in a large pot over medium heat. Add

Add the crushed tomatoes, diced tomatoes, and vegetable
broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
Use an immersion blender to puree the soup until smooth.

Tips:
Add a tablespoon of cornstarch to the pot for a thicker
soup before blending.
To make this soup vegan, use vegetable broth instead of
heavy cream.
You can add other vegetables to this soup, such as
