Ingredients:
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 pound chorizo, sliced
1 pound chicken, cut into bite-sized pieces
1 pound shrimp, peeled and deveined
1 cup long-grain rice
1 teaspoon saffron threads
4 cups chicken broth
Salt and pepper to taste
Instructions:
Heat the olive oil in a large paella pan or skillet
over medium heat.
Add the onion and garlic and cook until softened
about 5 minutes.
Add the red and green bell peppers and cook until
softened, about 5 minutes more.
Add the chorizo and cook until browned, about 5
minutes more.
Add the chicken and cook until browned, about 5
minutes more.
Add the shrimp and cook until pink, about 2 minutes
more.
Stir in the rice and saffron.
Add the chicken broth and season with salt and
pepper to taste.
Bring the mixture to a boil, then reduce heat to
low, cover, and simmer for 20 minutes, or until the rice is tender.
Remove from heat and let stand for 5 minutes before
serving.
Tips:
If you don't have a paella pan, you can use a large
skillet.
You can add other ingredients to your paella, such
as peas, mussels, or clams.
You can also use different types of rice, such as
bomba rice or arborio rice.
Paella is best served fresh, but it can be stored in
the refrigerator for up to 3 days.
