Ingredients:
1 cup quinoa
2 cups water

1/4 cup chopped fresh parsley

Instructions:
Preheat oven to 400 degrees F (200 degrees C).
Rinse quinoa in a fine-mesh sieve until water runs clear.
Combine quinoa and water in a medium saucepan. Bring to a
boil, then reduce heat to low and simmer for 15 minutes, or until quinoa is
cooked through.
While quinoa is cooking, prepare vegetables. Toss broccoli,
carrots, sweet potatoes, and red onion with olive oil, salt, and pepper. Spread

While vegetables are roasting, prepare dressing. Whisk
together parsley, cilantro, lemon juice, olive oil, honey, salt, and pepper in

To assemble bowls, divide quinoa among four bowls. Top with
roasted vegetables and drizzle with dressing.
Tips:
You can use any of your favorite vegetables in this bowl.
If you don't have fresh herbs, you can use dried herbs.
