Ingredients:
1 large zucchini, cut into 1/2-inch thick slices
1 large yellow squash, cut into 1/2-inch thick
slices
1 large red onion, cut into 1/2-inch thick slices
1 large red bell pepper, cut into 1/2-inch thick
slices
1/2 cup balsamic vinegar
1/4 cup olive oil
2 tablespoons honey
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh parsley
Instructions:
Preheat the grill to medium heat.
In a large bowl,1 whisk together the balsamic
vinegar, olive oil, honey, Dijon mustard, salt, and pepper.
Add the zucchini, yellow squash, red onion, and red
bell pepper to the bowl and toss to coat.
Grill the vegetables for 5-7 minutes per side, or
until tender and slightly charred.
Remove the vegetables from the grill and let them
cool for a few minutes.
Add the parsley to the bowl and toss to combine.
Serve the salad immediately.
Tips:
If you don't have a grill, you can roast the
vegetables in a hot oven.
To make this salad more filling, you can add grilled
chicken or shrimp.
You can also add other vegetables to this salad,
such as eggplant, portobello mushrooms, and corn on the cob.
