This slow cooker chicken and dumplings recipe is the perfect comfort food for a cold winter day. It's also a great dish to make ahead of time, as it can be cooked in the slow cooker all day long.
Ingredients:
1 (3-4 pound) bone-in, skin-on chicken
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 cup all-purpose flour
1 cup milk
1/2 cup water
1/4 cup butter
1/4 cup chopped fresh parsley
Instructions:
Place the chicken, onion, carrots, celery, garlic,
salt, pepper, thyme, and oregano in a slow cooker.
In a small bowl, whisk together the flour, milk, and
water.
Pour the flour mixture over the chicken and vegetables.
Dot the top with butter.
Cover and cook on low for 6-8 hours, or until the
chicken is cooked through.
Remove the chicken from the slow cooker and shred it.
Stir the shredded chicken back into the slow cooker.
Bring the slow cooker to a simmer.
In a small bowl, combine the biscuit mix, milk, and
butter.
Drop the biscuit dough by spoonfuls onto the simmering
chicken mixture.
Cover and cook for an additional 15-20 minutes, or
until the dumplings are cooked through.
Garnish with parsley and serve.
Tips:
You can use any type of chicken you like for this
recipe.
If you don't have any biscuit mix, you can make your
own using this recipe.
This dish can be made ahead of time and frozen. Simply
reheat it in the slow cooker on low for a few hours.
