If you purchase anchovies
wrapped in salt, you'll need to leave them to soak for 5-10 minutes in a bowl
of water to extract excess salt. Some of the brands leave the spine in, which
can be easily removed by pinching it out with your fingers.
Add a pinch of anchovy to a
balsamic and olive oil vinaigrette to appreciate a new depth of flavour.
Add two or three anchovies to
a beef stew pot to give it a taste boost, without having to deal with a fishy
smell.
Consider making a gourmet dip
sauce by combining roasted red peppers, anchovies and olive oil in a blender.
Use this for everything from crudités to breadsticks to tempura vegetables and
lamb chops.
Complete a boned leg of lamb
with a combination of dill, feta, diced olives, anchovies and lemon zest for a
well-flavoured stuffing.
Add the garlic sauce to the
red wine pan to pour over beef.
