Grilled/Baked Santa Fe Chicken Foil Packets






Chicken foil packages are perfect for a dinner, picnic, or even a backyard bbq. This Santa Fe Chicken Recipe roasts a super tasty south-of-border flair. It's a common entree that lets you mix and match the veggies and spice amounts you like! Get into fresh, brightly colored vegetables that cook at the same rate as everything else.

With a fast and easy prep time, this recipe is awesome for busy summer days with a delectable balance of fresh vegetables and beans.

Place wide sheets of foil on a flat surface and spray with a cooking product.
Put the chicken in the middle of each piece and season. Add the Vegetables and the salsa to each chicken breast.
Fold in the ends to secure and grill the foil packages.

Cook on the grill for about 20-25 minutes per wrapper, turning halfway through. They can also be cooked in a 375 ° F oven for 30 minutes or further depending on the size of the chicken breasts.

¾ cup salsa or 10 ounces Diced Tomatoes & Green Chilies, drained
½ cup Mexican cheese or Monterey jack, shredded
cilantro tomatoes & jalapenos for garnish
