They 're creamy, shiny,
decadent, and tasty. It's the Southern delicacy of the sweet boozy sweetness of
sugar, pecans and bourbon.
Ingredients:
3/4 cup chopped pecans
3 Tablespoons Woodford
Reserve Kentucky bourbon
1/4 cup butter softened
3 cups powdered sugar sift
and measure carefully
16 oz semi-sweet chocolate
Optional toppings - pecan
halves chopped pecans, walnuts or almonds, cocoa powder, confectioners' sugar,
sea salt
Blend the pecans and the
whiskey in a bowl and let it ferment for an hour.
Cream butter and sugar
together using a an electric mixer until creamy.
Add the pecans and bourbon to
the butter and the sugar mixture.
Chill in the refrigerator for
1 hour.
Roll in 1 inch balls and
position on a cookie sheet blanketed with waxed paper. Refrigerate for 2 hours.
Melt the chocolate in the
microwave at intervals of 30 seconds until it has melted, mixing after each
interval. Using only a fork to hold the bourbon ball, dip each chocolate ball
entirely. Keep a ball over chocolate for a few seconds to allow the excess to
drip off. Bring it back on the waxed paper to cool fully.
Whether you want to finish
with a pecan quarter, almonds, or salt, push gently onto the top of the ball
immediately before the chocolate cools and hardens.
