Ham leftovers with a cajun feel. Serve with a green salad and a tall ice tea.
Ingredients

cups ham cubed

tablespoon olive oil
1 cup
onion chopped
3/4 cup
green bell pepper chopped
1 teaspoon
garlic
14.5
ounces stewed tomatoes
14 ounces
chicken broth

teaspoon Cajun seasoning
1 1/2
cups rice
Instructions
In a
large saucepan over medium heat, heat the olive oil. Cook for 5 minutes, or
until the onion, sweet pepper, and garlic are soft, in heated oil. Combine the
undrained stewed tomatoes, chicken broth, ham, and Cajun spice in a mixing
bowl. Bring to a boil, then turn off the heat. Cook for 5 minutes, uncovered.
Stir in the rice. Turn off the heat. Cover and set aside for 5 minutes, or
until the rice is soft.
