This
recipe is quick and easy to make, thanks to a recipe passed down from family.
Ingredients
1 (16 ounces) package spaghetti
¾ cup olive
oil, divided
6 cloves
garlic, minced
2 (4
ounces) cans of sardines packed in olive oil, drained
1 cup
seasoned bread crumbs
⅓ cup
freshly grated Parmesan cheese
¼ cup
chopped fresh parsley
1
teaspoon ground black pepper
1 pinch
additional Parmesan cheese for topping
A big
saucepan of lightly salted water should be brought to a boil. Cook until the
pasta is al dente, about 8 to 10 minutes. Rinse with cold water after draining.
Cover and keep heated after tossing with 1/4 cup olive oil. In a pan, heat
another 1/4 cup olive oil over medium heat. Cook for 2 to 3 minutes, or until
the garlic is golden. Cook for 1 minute more after adding the sardines. Combine
the bread crumbs and 1/3 cup Parmesan cheese in a mixing bowl. Mix in the
leftover 1/4 cup olive oil if needed to make the mixture crumbly. Remove from
the fire and mix in the parsley and pepper. Serve with more Parmesan cheese if
desired.
