Soft and
chewy Oatmeal Raisin Cookies delightfully moist and tasty, with a generous
helping of juicy raisins.
INGREDIENTS
3 Large Eggs
1 ½ - 2 cups Raisins
1 teaspoon Vanilla Extract
1 cup Softened Butter
1 cup Dark Brown Sugar
1 cup Granulated Sugar
2 ½ cups All-Purpose Flour
2 teaspoons Baking Soda
1 teaspoon salt
2 teaspoons Cinnamon
2 cups Quaker Oats Old Fashioned Oatmeal
In a
small dish, whisk together the eggs. Mix in the vanilla and raisins. Combine
thoroughly. Refrigerate for at least one hour before serving. In a mixing bowl,
combine melted butter, sugar, and brown sugar.
In a
separate basin, combine the dry ingredients (flour, salt, baking soda, and
cinnamon).
One cup
at a time, stir in the flour mixture until fully combined.
Mix in
the egg, vanilla, and raisin mixture until well blended.
Mix in
the oatmeal until well blended.
Cook for
10-12 minutes in a 350°F oven. Allow it cool completely before transferring to
a sealed container.
