Skirt
steak cured in a Guinness stout beer, spicy sauce, and brown sugar marinade. It
results in a somewhat sweet, juicy steak that will tempt your taste buds!
Ingredient
1 (12
fluid ounce) bottle Irish stout beer Guinness is best
¼ cup
olive oil
⅓ cup
red wine vinegar
3
tablespoons dark brown sugar
3 cloves
garlic, chopped
1
tablespoon hot pepper sauce
2 pounds
skirt steak or more to taste
In a
glass or ceramic bowl, whisk together the beer, olive oil, vinegar, brown
sugar, garlic, and spicy sauce until the marinade is smooth. Turn the meat in
the marinade to coat. Marinate in the refrigerator for 8 hours overnight,
covered with a lid or plastic wrap. Heat an outside grill to high heat and
brush the grate gently with oil. Take the steak out of the marinade and brush
off any excess. Remove marinade from the pan. Grill the steak on a hot grill,
flipping once, for 5 to 6 minutes each the side, or until it begins to firm and is
reddish-pink and juicy in the middle. A thermometer put into the middle should
read 130 degrees. Allow for a 2 to 3-minute rest before eating.
