A simple chicken marinade is used to make a Tex Mex supper. Make this dish for a one-of-a-kind supper!
Ingredients
1 1/2 lbs boneless chicken breasts 3 tbsp olive oil separated
1/2 cup lime juice
1 tbsp lime zest
1/4 cup honey
2 tsp chipotle chili powder
2 tsp garlic powder
1/2 tsp ground cumin
1/4 cup fresh cilantro chopped
1/8 tsp salt
Directions
In a medium mixing bowl, add 2 tablespoons olive oil, lime juice, lime zest, honey, chipotle chili and garlic powders, cumin, cilantro, and salt. Set aside 1/3 cup of the marinade.
Place the chicken breasts in a glass baking dish or a gallon zip-top bag. Pour marinade over chicken breasts and place in refrigerator for at least 30 minutes, but no more than 1 hour.
Add the last tablespoon of oil to the heated skillet. On medium-high, cook the chicken for 1-2 minutes, or until golden brown. Lightly coat with the marinade, then flip and fry for another 1-2 minutes. Lightly coat one more, then cover and simmer on low for 10 minutes. Move to a platter and cover loosely with foil to keep warm till ready to serve.
Slice to top salads or tacos, or serve whole with a side dish or sandwich. When ready to serve, drizzle with the remaining marinade.
