This
delicious rich cake will become a favorite at your house. It's great for any
occasion, party, or just an elegant dessert.
Ingredients

butter

white sugar
2 eggs

teaspoon baking soda

buttermilk
2 cups
all-purpose flour
1 (9
ounces) package condensed mincemeat, crumbled

silvered almonds as garnish
Heat the
oven to 300°F. Two 8-inch round cake pans, greased and floured In a large
mixing basin, cream butter or margarine. Slowly add the sugar, beating
vigorously after each addition. Incorporate the eggs one at a time, beating the
mixture well after each addition. Stir the baking soda into the buttermilk and
dissolve. Alternately add flour to creamed mixture and buttermilk mixture,
beginning and finishing with the flour. After adding, thoroughly combine the
ingredients. Mix in the shredded mincemeat. Pour batter into prepared baking
pans.

minutes, or until a wooden pick inserted into the middle comes out clean. Allow
the cake to cool in the pan for 10 minutes. Take layers from pans and
set them aside to cool fully. Caramel Cream Frosting is used to fill and frost
the cake. You may also garnish with slivered almonds.
