DIY Popeyes Chicken Sandwich

 


Copycat Popeyes Buttermilk Fried Chicken Sandwich with Spicy Mayo is crispy, spicy, and easy to make at home.

To create the appropriate size fillet, pound each chicken breast to about 1/2 inch thickness before cutting in half crosswise to make a chicken cutlet about the size of your buns.

To make spicy mayo sauce:

Combine 1/2 cup of mayo with 1 teaspoon hot sauce, teaspoon paprika or taco seasoning, and 1/2 teaspoon garlic powder and whisk. The sauce is delicious in the chicken sandwich and is used to make the spicy version of Popeyes chicken sandwich.

Marinade

2 boneless skinless chicken breasts

1 cup buttermilk

1 teaspoon paprika garlic powder, black pepper, salt

 For Breading

1 cup flour

½ cup corn starch

1 tablespoon paprika garlic powder, onion powder, cayenne pepper to taste

1 teaspoon salt & pepper to taste

 Spicy mayo

½ cup mayo

1 teaspoon hot sauce

1 teaspoon paprika or cajun or taco seasoning

1/2 tsp garlic powder

 

TO ASSEMBLE

4 medium-sized brioche buns

Mayonnaise

Sliced pickles

3-4 cups canola oil for frying


Marination Instructions for Chicken

Using two pieces of parchment paper or plastic wrap, pound the chicken breasts. Cut each chicken breast in half crosswise to form two little chicken pieces around the size of the bread.

Buttermilk, paprika, garlic powder, salt, and black pepper in a large mixing dish Place the chicken in the mix and refrigerate for up to 24 hours, or use right away.

When cooking the chicken, heat the oil in a big heavy-duty pan or pot over medium heat until it reaches 350F.

Whisk together the flour, cornstarch, and spices in a medium shallow basin. Mix 2-3 tablespoons of the buttermilk batter into the flour mixture with a fork. Dredge the chicken in the flour mixture, one piece at a time, and press the flour onto the top chicken to produce a thick crust. Fry the chicken for 3-5 minutes per side, or until the exterior is crispy and brown and the interior temperature reaches 165F.

 To Put Together

In a large skillet, melt 1 tablespoon butter and toast buns face down until brown and crisp. In a small bowl, whisk together all of the mayonnaise ingredients. Spread a liberal amount of mayonnaise on each bun. Serve with pickles and chicken on top. Enjoy while it's hot!
