Italian Roasted Mushrooms and Veggies

 


Italian Roasted Mushrooms and Veggies is the simplest method to roast mushrooms, cauliflower, tomatoes, and garlic in the Italian manner. Easy and delectable.

 

INGREDIENTS

1 pound cremini mushrooms cleaned

2 cups cauliflower cut into small florets

2 cups cocktail tomatoes

12 cloves garlic peeled

2 tablespoon olive oil

1 tablespoon Italian seasoning

salt and pepper to taste

1 tablespoon fresh parsley chopped

 

Directions

Heat the oven to 400°F.

Combine all of the mushrooms and vegetables in a mixing bowl. Splash with olive oil, then mix with Italian seasoning, salt, and pepper until thoroughly incorporated. Place the vegetables on a baking pan and preheat the oven. Cook for 20–30 minutes, or until the mushrooms are golden brown and the cauliflower is fork soft. When serving, garnish with fresh parsley.
