Stuffed Pepper Soup



Quick soup that tastes like stuffed peppers. A perfect meal in one pot, and it's nice with warm bread and a salad!

What you need

1 pound ground sirloin
1 green bell pepper, chopped
1 cup finely diced onion 
1 (29 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (14 ounce) can chicken broth
¼ teaspoon dried thyme
¼ teaspoon dried sage
salt and pepper to taste
1 cup white rice

Brown ground meat in a large pot. Drain the grease, add the pepper and the onion. Cook until the onion becomes transparent, just do not make it brown.

To your pot, add tomatoes, tomato sauce, broth, thyme, sage and season with salt and pepper. Cover and simmer 30 to 45 minutes until the peppers are soft.

Boil 2 cups of water in another saucepan and add the rice. Cook until the rice is tender, then transfer to the soup. Heat the soup and serve.
