It is no secret that my
daughter Stephanie can not only cook, but can bake. You don't find many that
have both talents. Below is her recipe for pineapple fluff that's no secret!
4 ounces cream cheese, room
temperature
1/2 cup butter, room
temperature
2 cups confectioners sugar
20 ounce can crushed
pineapple, drained
8 ounces whipped topping,
such as cool whip
2 cups mini marshmallows
1 cup maraschino cherries
drained and chopped
In a large bowl and with a
hand-held blender, mix the cream cheese and butter until creamy. Add the sugar
to 2 cups of the confectioners and stir again until the mixture is fully
combined.
Add the (cool whip), diced
pineapple, mini marshmallows and cherries. Using a spatula, blend softly before
completely incorporated. Refrigerate for at least two hours, ideally overnight.
The prep time is only 10
minutes, after that chilling time, you have a yummy dessert.
