Some meats famous in Louisiana, for cooking





Andouille SAUSAGE
Pronounced An-DOO-EE, this is the typical sausage used in gumbo, red.
 Beans and rice and jambalaya dishes.
It's a bit on the spicy side, made with pork only, and it's thoroughly cooked and smoked. It's great on the barbecue, in the oven, steamed or deep fried. Start stopping the oven. It renders the normal case difficult.

BOUDIN SAUSAGE
Pronounced BOO-DAN, this is a rice sausage with pork, onions, a tiny bit of pork liver, herbs and broth crammed in an edible natural casing. It's awesome on the grill, in the steamer, in the oven, and even in the microwave. It's a type of single alone side dish sausage. 

TASSO
Tasso ham is a pork that is fully baked, smoked and seasoned.
It is used mainly for seasoning beans, onions, cabbage, red beans and vegetables
There are dishes, a lot of people use it in gumbo, jambalaya, and make shrimp and grits and maque choux.
