Dick Taylor Chocolate Review



Later tonight, after our meals are done, my family and I will try chocolate bars, from Dick Taylor Chocolate


Some background on the company started with the pairs, love of woodworking and boat building. What they saw in this craft, became their passion for reinventing the chocolate experience. Using the finest cacao and the Standard European process, all of their chocolate is finely made from the bean. This is all done in their modest factory in Northern California.


The first bite of the chocolate that the company sent is the Belize Toledo. I must add that the packaging of the candy is has stunning art work of a wooden boat being built. So back to the candy. The outstanding cocoa they use for this product, comes from the Toledo region in southern Belize. Maya Mountain Cacao is a small co-op that has partnered with local Mayan farmers to boost not just the standard of cocoa they cultivate but also their quality of life. They excel on all dimensions, and this award-winning bar is evidence of that. Eating the Belize chocolate bar, was like very smooth, with a gentle fruity organic flavor. This chocolate bar would go great paired with wine or brie. Clearly, Dick Taylor Chocolate takes their chocolate-making seriously. You have to take note that there is only two ingredients to this chocolate bar, the cacao from Belize, and cane sugar. You will taste so much more in every bite. You just need to experience gourmet chocolate to understand the taste. Little bites of this chocolate goes a long way, to satisfy your palette. The taste is not what you are going to expect, it is not your common chocolate candy bar. This is a highly crafted chocolate with unique flavor, that is recognized world wide.


For the next tasting, it was the craft chocolate microbath vanilla milk. This bar is one of Dick Taylor Chocolate unique inclusion of the month. Also they offer this bar as a monthly subscription. This month's bar is a 55% dark milk chocolate containing their Brazilian cocoa and a really special A2/A2 whole milk powder created by Alexandre Family Dairy. This is a exquisite bar, and you can taste the vanilla bean, with a aromatic cacao scent. It brings many child hood memories back of warm summer nights, and loved tasting it with a glass of cold milk. The milk used in this bar is considered Old fashion. It is a natural milk that you add to your body, and is easily digested. I will definitely say this chocolate shaved would be a great addition to top off a dessert with.


The last bar, I have the honor of tasting is the Dick Taylor Chocolate dark black fig. The Cacao used for this bar originates from the Bertil Akesson plantation in the Sambirano Valley of Madagascar. Black Mission figs from California, makes this a outstanding chocolate bar. It is smooth, with citrus notes, and the fruit bites and nuts. This is a serious chocolate bar, not to be taken lightly when eating. You want to take small bites and cherish every chew. It would make a great addition to a dessert recipe, or paired with wine tasting. The balance of the sweetness is perfect. It was a pleasure on my palate.
